Winemaking
The wines were cold soaked for
3 to 5 days and then fermented in
stainless steel tanks for 7 to 10 days with the
maximum temperature of 90 degrees. The Cabernet Sauvignon lots were
put through extended maceration for another 3 weeks. The lots were
pressed into barrels where malolactic fermentation took place and
monitored separately. They were racked 5 times before being blended
in June of 2005 and bottled in August of 2005.
Tasting Notes
This elegant
Bordeaux
blend of Cabernet Sauvignon, Merlot and Petit Verdot was created
with earlier accessability in mind. Earth, fruit, and tobacco
notes show up the nose, leading to a restrained mid-palate of dried
cherry, plum, and cassis, framed by ripe but moderately chewy
tannins. Underlying flavors of cocoa powder, chocolate, and orange
peel round out the wine through its long finish. It shows
intensity and yet is smooth.
