Winemaking
The Cabernet
was pumped over frequently and cold soaked for 4 days and then
fermented in stainless steel tank for 9 days with the maximum
temperature of 88 degrees. It was put through extended maceration
for another 3 weeks and pressed in early December, 2003. Malolactic
fermentation took place in the barrel. The wines were racked 4 times
and aged 21 months in oak before being bottled in August of 2005.
Tasting Notes
As usual the
wine carries a certain weight and density we have come to expect
from this vineyard. Built for the long haul,
its ripe but full tannins well hide the complex, dense flavors of
bitter chocolate, cedar, black fruits and tobacco.
While it does not appeared to be as tannic as the 2002 Sacrashe and
should easily last more than 15 years
under proper cellar conditions, we
recommend aeration of at least half a day if you wish to drink it
young.
