Winemaking
The Cabernet
was pumped over frequently and cold soaked for 4 days and then
fermented in stainless steel tank for 9 days with the maximum
temperature of 90 degrees. It was put through extended maceration
for another 3 weeks and pressed on 11/9/2002. Malolactic
fermentation took place in the barrel. The wines were racked 5 times
and aged 29 months in oak before being bottled in March of 2005.
Tasting Notes
After a long
fermentation and extended maceration, the wine was
pressed and aged in 100% new French oak for 29 months. A touch of
Merlot and Cabernet Franc were added for further complexity.
Probably the most concentrated Sacrashe we've made so far,
its integrated tannins frame the complex, tightly knit flavors of
baked stone fruits, chocolate, wild mushrooms, and smoked meat An
extremely dense wine that should easily last more than 10 years
under proper cellar conditions, we
recommend aeration of at least half a day if you wish to drink it
young.
