Winemaking The wines were cold soaked for 2 to 3 days and then fermented in stainless steel tanks and half ton bins for 7 to 10 days with the maximum temperature of 88 degrees. The Cabernet Sauvignon lots were put through extended maceration for another 3 weeks. The lots were pressed into barrels where malolactic fermentation took place and monitored separately. They were racked 3 times before being blended in May of 2003 and bottled in August of 2003. Tasting Notes
