Winemaking
The Cabernet was
pumped over frequently and cold soaked for 3
days and then fermented in stainless steel tank for 9 days with the
maximum temperature of 88 degrees. It was put through extended
maceration for another 3 weeks and pressed on 11/7/2000. Malolactic
fermentation took place in the barrel. The wines were racked 4 times
before being blended in May of 2003 and bottled in August of 2003.
Tasting Notes
Located at 750 feet elevation overlooking
Silverado Trail in Rutherford, this hillside vineyard produces fruit
with distinction and purity.
After a long
fermentation and extended maceration of 35 days total, the wine was
pressed and aged in 100% new French oak for 21 months. A touch of
Merlot and Cabernet Franc were added for further complexity. The
finished wine shows an array flavors of spice, blackcurrants, cedar
and mocha, supported by sweet, ripe, mouth-coating tannins that lead
to a very long finish. A massive wine from a near perfect vintage,
it is very approachable and yet patience will be a virtue.
