Winemaking
The wines were cold soaked for 2 to 3 days and then fermented in
stainless steel tanks and one ton bins for 7 to 10 days with the
maximum temperature of 85 degrees. The Cabernet Sauvignon lots were
put through extended maceration for another 3 weeks. The lots were
pressed into barrels where malolactic fermentation took place and
monitored separately. They were racked 5 times before being blended
in May of 2002 and bottled in August of 2002.
Tasting Notes
This Bordeaux blend offers scents of violets, spices, herbs and
black fruits. Sweet, ripe, well-focused fruit in the core of the
wine with its smooth, silky mouth feel leads to a clean, integrated
finish. The emphasis on this wine is on finesse and elegance. While
this wine is very drinkable now, we believe it will soften and
develop with further aging.
