Winemaking The Cabernet was pumped over frequently and cold soaked for 2 days and then fermented in stainless steel tank for 10 days with the maximum temperature of 85 degrees. It was put through extended maceration for another 3 weeks and pressed on 11/27/2000. Malolactic fermentation took place in the barrel. The wines were racked 4 times before being blended in May of 2002 and bottled in August of 2002. Tasting Notes Located at 750 feet elevation overlooking Silverado Trail in Rutherford, this hillside vineyard produces fruit with distinction and purity. The finished wine shows a complex, fragrant bouquet of lavender, currents, spices, herbs and floral notes. Concentrated without being heavy, its smooth, pure, well focused, spicy flavors are supported by ripe tannins underneath that end in a long lingering integrated finish. We believe this wine will age gracefully for 10 plus years.
